DESCRIPTION:Red or white wine with cheese? \nWith three wines from Grand Cru Château Talbot in St Julien and three expressions of Comté cheese from the Jura mountains of France\, we’d like to propose a light experiment in the successful pairing of wine and cheese. \nChâteau Talbot produces three wines: Château Talbot\, Connétable Talbot\, Caillou Blanc. These wines are based on Cabernet Sauvignon and Merlot for the reds\, and Sauvignon and Sémillon for the white. The Château is located atop of a plateau overlooking the Gironde estuary in the St Julien appellation and has a long storied history. \nComté cheese is a PDO cheese which traces its origins over 1000 years ago in the Jura Massif. Crafted every day in some 140 fruitières\, it is a pressed\, cooked cheese made with raw milk from the Montbéliarde and Simmental cows. The 80-lb wheels are aged by 14 local affinage houses and weigh approximately 80lbs each. \nJoin Jean-Louis Carbonnier USA spokesperson for both Château Talbot & Comté cheese in this tasty pairing experiment together. \n

DESCRIPTION:Chicago has always been known as a welcoming location for immigrants\, and no neighborhood proves this more than the area around 18th Street\, now known as Pilsen. \nOn our walking and eating tour of this picturesque neighborhood\, you will see architecture and art (including LOTS of murals!) indicative of all of those who have passed through.  We will also sample foods from family-owned businesses making the area “one of the best neighborhoods in the country” as it has been named in recent press. \nWe will walk and talk about the neighborhood’s history\, art\, culture and\, of course\, its foods. Along the way\, we will be eating\, then we will have a sit-down tasting\, family style. DESCRIPTION:Bread & War by Felicia Spector \nThere are heroes everywhere and\, in the war-torn Ukraine\, Felicia Spector traveled with many of them in an effort to hear and share their stories. She worked with Bake for Ukraine\, a small non-profit run from Odessa and comprised of food people with a mission of promoting culture as well as fundraising and sourcing equipment for small bakeries which make free bread for those most in need. These extraordinary stories of refugees and restaurateurs who rebuild lives and kitchens in the midst of chaos show a determination to provide good food for a besieged people. \nWhile the war and its victims exist in a very depressing world\, the book is “gently heroic and humane. Reading it is like sharing a comforting meal with strangers in time of distress”. Through her writing\, you will find humor and humanity in the midst of so much inhumanity.* \nSince February is nasty-weather-time in Chicago\, this discussion will be on Zoom. And it will be led by non-other than the author herself\, who will be joining us from her home in London (thus the earlier start time – please note!) \nAs a companion book\, if you have time to read more\, get your hands on Jose Andres’ little book called CHANGE THE RECIPE — “Because you can’t build a better world without breaking some eggs.” Here is one of the most impressive humanitarians and Heros of War\, who shows up wherever people are in distress and feeds them. His book is a collection of life lessons-and wisdom from a man who has dedicated his life to changing the world through the power of food. \nSince you will be at home and we won’t be dining together\, perhaps you will want to break out a loaf of crusty bread and/or make a pot of steaming soup to enjoy as we talk. Felicity has included a few recipes for each in the back of her book for inspiration. I recommend the Mushroom Yushka Soup! \nDate: Tuesday\, February 10\, 2026  \nTime:  5:00pm CST (NOTE THE EARLIER START TIME) \nLocation: Zoom \nPrice: $20

While at the Tribune\, she got to know Chef Rick Bayless. Their shared passion for Mexican cooking led to a 20-plus-year partnership\, during which they co-authored 3 award-winning cookbooks and produced 11 seasons of the Public Television show “Mexico One Plate at a Time.” \nHer career pivoted from writing and recipe development when they founded Frontera Foods. For more than 20 years she led product development\, production\, quality and consumer education. She also learned a lot about selling and marketing specialty foods. Along the way\, they also opened Tortas Frontera and other fast-casual restaurants that relied on their products for consistency and large- scale food sales. \nWhen Frontera Foods was sold to Conagra Brands\, JeanMarie joined the company to oversee the next phase of the products.
