SUMMARY:Dames Who Read February 2026
DESCRIPTION:Bread & War by Felicia Spector \nThere are heroes everywhere and\, in the war-torn Ukraine\, Felicia Spector traveled with many of them in an effort to hear and share their stories. She worked with Bake for Ukraine\, a small non-profit run from Odessa and comprised of food people with a mission of promoting culture as well as fundraising and sourcing equipment for small bakeries which make free bread for those most in need. These extraordinary stories of refugees and restaurateurs who rebuild lives and kitchens in the midst of chaos show a determination to provide good food for a besieged people. \nWhile the war and its victims exist in a very depressing world\, the book is “gently heroic and humane. Reading it is like sharing a comforting meal with strangers in time of distress”. Through her writing\, you will find humor and humanity in the midst of so much inhumanity.* \nSince February is nasty-weather-time in Chicago\, this discussion will be on Zoom. And it will be led by non-other than the author herself\, who will be joining us from her home in London (thus the earlier start time – please note!) \nAs a companion book\, if you have time to read more\, get your hands on Jose Andres’ little book called CHANGE THE RECIPE — “Because you can’t build a better world without breaking some eggs.” Here is one of the most impressive humanitarians and Heros of War\, who shows up wherever people are in distress and feeds them. His book is a collection of life lessons-and wisdom from a man who has dedicated his life to changing the world through the power of food. \nSince you will be at home and we won’t be dining together\, perhaps you will want to break out a loaf of crusty bread and/or make a pot of steaming soup to enjoy as we talk. Felicity has included a few recipes for each in the back of her book for inspiration. I recommend the Mushroom Yushka Soup! \nDate: Tuesday\, February 10\, 2026  \nTime:  5:00pm CST (NOTE THE EARLIER START TIME) \nLocation: Zoom \nPrice: $20

SUMMARY:Lunch and Learn: The World of CPG with Dame JeanMarie Brownson
DESCRIPTION:Join Les Dames Chicago for a Lunch and Learn with JeanMarie Brownson to talk food products\, from ideation to development to getting your passion products on the shelf! \nDame JeanMarie’s passion for cooking and travel shaped a four-decade career that launched in the test kitchens of Cuisine Magazine and the Chicago Tribune. While at the Tribune\, she got to know Chef Rick Bayless. Their shared passion for Mexican cooking led to a 20-plus-year partnership\, during which they co-authored 3 award-winning cookbooks and produced 11 seasons of the Public Television show “Mexico One Plate at a Time.” \nHer career pivoted from writing and recipe development when they founded Frontera Foods. For more than 20 years she led product development\, production\, quality and consumer education. She also learned a lot about selling and marketing specialty foods. Along the way\, they also opened Tortas Frontera and other fast-casual restaurants that relied on their products for consistency and large- scale food sales. \nWhen Frontera Foods was sold to Conagra Brands\, JeanMarie joined the company to oversee the next phase of the products. There\, she launched Frontera products into the frozen food category. \nToday\, JeanMarie continues to inspire as the owner of JMB Culinary Consulting\, guiding specialty food startups and writing a weekly recipe column for Tribune Content Agency column. \nDate: Wednesday\, February 18\, 2026 \nTime:  11:30am \nLocation: ZOOM \nPrice: Free for members. $5 for non-members \nA portion of proceeds will benefit the Chicago chapter of Les Dames d’Escoffier\, an organization of women in food\, beverage and hospitality working to support the next generation of women in the industry.

SUMMARY:Lunch and Learn: Food’s Next Chapter: Where Flavor\, Health and Culture Converge with Janet Helm\, MS\, RDN
DESCRIPTION:Today’s food culture is evolving at record speed\, shaped by global flavor exchange\, digital influence and shifting values around health\, sustainability and pleasure. Understanding where food culture is heading — and why — has never been more important for culinary professionals. \nFood and flavor trends are moving into new territory: globally inspired yet locally interpreted indulgent yet intentional\, and deeply connected to storytelling and origin. Social platforms likeTikTok have become powerful tastemakers\, accelerating trends and introducing consumers to bolder flavors\, richer textures and more sensory food experiences. Expect growing demand for foods that deliver depth\, umami and color — often inspired by third-culture cuisines\, immersive dining experiences and a renewed appreciation for little luxuries. \nAt the same time\, the Make America Healthy Again (MAHA) and Food as Medicine movements\, climate concerns and rising food prices are reshaping how consumers think about food. Rather than restriction\, today’s health-driven eating emphasizes balance\, satisfaction and ingredient integrity. Even as GLP-1 medications influence portion sizes and product development\,consumers continue to seek foods that feel nourishing\, comforting and worth savoring — especially those made with fewer\, better ingredients. \nJoin Dame Janet Helm for a dynamic\, insight-driven exploration of the key food\, nutrition and flavor trends shaping 2026 and beyond. Janet Helm\, MS\, RDN\, is a Global Food Culture Analyst\, PR Strategist\, and Founder of Food at the Helm consultancy. \nDate: Wednesday\, March 25\, 2026 \nTime:  11:30am \nLocation: ZOOM \nPrice: Free for members. $5 for non-members \nA portion of proceeds will benefit the Chicago chapter of Les Dames d’Escoffier\, an organization of women in food\, beverage and hospitality working to support the next generation of women in the industry. \nThank you!

SUMMARY:Dames Who Read April 2026: The Rarest Fruit
DESCRIPTION:Some of you may remember how charmed and enlightened we were when we read “The Food Explorer”\, which was all about the discovery and importation of various food items\, most of which are extremely common today. Our current book is all about one of our favorites of those items\, vanilla\, and how the conundrum of pollinating the flowers was finally solved by a young slave\, whose story then went unrecorded for many years. From the book’s cover is this review: “A two-century-old story brought back to life by (Belem’s) smart\,voluptuous\, no-nonsense pen balancing fantasy\, Creole mythology and Reunionese folklore” \nAuthor Gaelle Belem carefully researched the very few existing records of this discovery and its discoverer. Based on this limited\, tho accurate\, amount of information\, she has pieced it into a fascinating and historical novel. Read the book and join us on a field trip to Waukegan for a facility tour and lunch discussion. We will taste various vanilla flavors and hear the story of the Nielsen-Massey family business. Long time Dame Camilla Nielsen and her third-generation son\, Matt Nielsen\, will welcome us and are excited to host The Dames Who Read. \nThis will be a special day and we look forward to this April Field Trip! \nNOTE: If you will be driving and have room for a passenger or more\, please let Judith(judith@judithdunbarhines.com) know – we will try to help everyone with car pool information. \nDate: April 11\, 2026 \nTime:  11am-2pm \nLocation: Nielsen-Massey Vanillas Inc. (1550 Shields Drive\, Waukegan\, Illinois USA 60085) \nPrice: $45 includes light lunch \nAdditional notes. \nA portion of proceeds will benefit the Chicago chapter of Les Dames d’Escoffier\, an organization of women in food\, beverage and hospitality working to support the next generation of women in the industry. \nThank you!
