Bordeaux & Comte Tasting

Red or white wine with cheese?

With three wines from Grand Cru Château Talbot in St Julien and three expressions of Comté cheese from the Jura mountains of France, we’d like to propose a light experiment in the successful pairing of wine and cheese.

Château Talbot produces three wines: Château Talbot, Connétable Talbot, Caillou Blanc. These wines are based on Cabernet Sauvignon and Merlot for the reds, and Sauvignon and Sémillon for the white. The Château is located atop of a plateau overlooking the Gironde estuary in the St Julien appellation and has a long storied history.

Comté cheese is a PDO cheese which traces its origins over 1000 years ago in the Jura Massif. Crafted every day in some 140 fruitières, it is a pressed, cooked cheese made with raw milk from the Montbéliarde and Simmental cows. The 80-lb wheels are aged by 14 local affinage houses and weigh approximately 80lbs each.
